Combine the flour, butter, sugar, ground almonds and salt in a food processor until the mixture resembles breadcrumbs. Add the egg and vanilla and run the motor until the mixture forms a ball. Form a disk, wrap in plastic and rrefrigerate for 2 hours. Preheat the oven to 425F. Roll out the dough to a 1/4-inch thick and line a 9-inch pie pan. Sprinkle the sponge biscuits in the base of the pie crust and scatter the peaches on top. Drained canned or bottled peaches can also be used. Mix the fromage blanc together with all the remaining ingredients and pour over the peaches. Bake for 25-30 minutes until golden-brown. Cool completely before serving.
